Tyrrell’s believe that Hunter Semillon should always be made without oak, to allow the citrus-like fruit flavours to stand out and the wine to develop complexity in the bottle. Old Winery Semillon is made from 100% Semillon, hand harvested and fermented in stainless steel vessels. Kept in contact with yeast lees prior to filtration and bottling to add richness and complexity to the palate. Sealed with a screwcap to ensure the freshness of the wine is preserved.
